- •1 lb Chinese Wheat Noodles
- •0.5 lb Ground Pork
- •3 Tbsp Chinese Sesame Paste
- •3 Tbsp Soy Sauce
- •2 Tbsp Chili Oil
- •3 cloves Garlic, minced
- •1 Tbsp Fresh Ginger, minced
- •3 stalks Scallions, chopped
- •0.5 tsp Sichuan Peppercorns, ground
Instructions
Bring a large pot of water to a boil for the noodles.
In a small bowl, whisk together sesame paste, soy sauce, chili oil, and 1/4 cup hot water until smooth. Set aside.
💡 Tip: Adjust chili oil to your spice preference.
Heat a wok or large skillet over high heat. Add ground pork and cook, breaking it up with a spoon, until browned and crispy, about 5-6 minutes.
Add garlic, ginger, and Sichuan peppercorns to the pork. Stir-fry for 1 minute until fragrant.
Cook noodles according to package directions. Drain, reserving 1 cup of cooking water.
Add noodles to individual bowls. Pour sauce over noodles and toss to coat, adding reserved cooking water as needed to loosen.
Top with the spicy pork mixture and garnish with chopped scallions. Serve immediately.
